About the
Program
This program offers Texas Tech students a unique opportunity to learn about the History of Food and the History of France in the iconic city of Paris. It combines conventional coursework with hands-on learning and activities designed to enrich students’ experience abroad. This program is much more than a three-week trip to the French capital, it is an immersive learning experience that has the the potential to transform the way you think about food, travel, and history.
Students from the Summer 2023 Program
Students will enroll in two summer classes
HIST 4346: A History of Food in Europe
HIST 3393: History in Paris
In June, students will learn online in these classes: viewing lectures, engaging in discussions, and completing assignments.
In July, everyone will meet in Paris, where classes will continue (in person), but where students will visit carefully chosen sites that illustrate, complement, and expand what they have been learning.
Classes
This Paris Itinerary include hands-on experiences like making bread, visits to historic sites like the Paris Catacombs, and cultural excursions, like attending the Paris Ballet. Visit the “Paris Itinerary” page for a full list of planned events and activities.
We have partnered with the established Study Abroad Company, “Academic Programs International” (API) to run this program. While students are in Paris, API staff will be on hand to offer 24-hour support to solve any problems that arise.

Meet Your Professors
The program was designed and is run by Dr. Erin-Marie Legacey and Dr. Ben Poole. They are both experts in French History and have been teaching at Texas Tech for over a decade. Dr. Legacey specializes in the history of France during and after the French Revolution and has written a book about post-revolutionary cemeteries (including the Paris Catacombs!). Dr. Poole is an expert on the history of French and European food. This program is a delicious combination of their two research interests.
